250g mixed mushrooms 2 tbsp butter 1 tbsp olive oil 3 garlic cloves 1/2 small onion 150ml cream or 100g mascarpone 50ml white wine or veggie stock zest of 1/2 lemon parmesan parsley pasta (we recommend pasta from the northern pasta co!)
method
1. Fry mushrooms in butter & oil until golden. Remove and set aside
In the same pan, cook shallots and garlic
Add wine/stock and simmer
Add cream or mascarpone and your lemon zest
Add mushrooms back into pan
Cook your pasta according to packet instructions, saving some pasta water once cooked
Toss with your cooked pasta and a splash of pasta water
