

Ingredients:
Rainbow Chard
Sourdough
White Onion
Garlic
Eggs
Method:
Cut out the thick stems from the chard, then chop them into small pieces. Once completed, slice the chard leaves into thin ribbons, keeping them seperate to the stems as they cook differently.
Next, dice onion and garlic.
Heat a drizzle of olive oil over low-medium heat. Add your chopped onion, garlic, and chard stems, cooking for around 7-10 minutes until soft.
Once soft, add in your chopped chard leaves, stirring the mixture together. Cook until the leaves soften and wilt down.
Whilst the chard cooks, toast your bread and cook two poached or fried eggs in a separate pan however you like them. Lastly, assemble the chard with your eggs on top!
